Position Overview:

We are seeking a skilled and creative individual to join our culinary team as a Demi Chef de Partie (DCDP) specializing in pastry. The ideal candidate will possess punctuality, creativity, and a strong commitment to following the chain of command within the hierarchy. They should thrive in a tropical island environment and be open to a demanding work schedule. The DCDP will be responsible for baking for breakfast operations and creating plated desserts using modern techniques, with a focus on utilizing sustainable island produce.

Key Responsibilities:

- Prepare and bake a variety of pastries and baked goods for breakfast operations, ensuring quality and freshness at all times.

- Develop innovative plated desserts using modern techniques and sustainable island produce, in collaboration with the Executive Chef.

- Supervise pastry commis and ensure they adhere to recipes, standards, and hygiene regulations.

- Manage inventory and ordering of pastry ingredients and supplies, while minimizing wastage and maximizing efficiency.

- Maintain cleanliness and organization of the pastry section, including equipment and workstations.

- Collaborate with other kitchen departments to ensure seamless service and consistency in quality across all food offerings.

- Stay updated on industry trends and techniques, and contribute creative ideas to menu development.

- Uphold high standards of food presentation and taste, while meeting guest expectations and dietary preferences.

Qualifications:

- Proven experience in pastry preparation and baking, with a focus on breakfast items and plated desserts.

- Strong passion for creativity and innovation in pastry arts, with a keen eye for detail.

- Excellent organizational and time-management skills, with the ability to multitask in a fast-paced environment.

- Effective communication and leadership abilities, with the capacity to work well within a team.

- Flexibility to adapt to changing priorities and schedules, including early morning shifts.

- Knowledge of sustainable practices in sourcing and utilizing local island produce is desirable.
